Spicy Noodle Soup Recipe

This spicy noodle soup recipe is something I have been playing with for a few weeks. I have been trying to find a cheap, quick, easy and healthy alternative to the packaged Ramen noodles.

I got a very large pack of rice noodle for one dollar and all you need is a few spices and maybe a few vegetables of your choice.

Serves 2.

Ingredients:
500ml water.
Vermicelli rice noodles.
2 table spoons Curry Powder (hot or Medium).
1 table spoon dried coriander or a handful of fresh coriander.
1 teaspoon turmeric.
Salt to taste.
Crushed Hot Red Pepper to taste.
Optional – fresh choped vegetables (a couple of handfuls. Broccoli, green onions, red pepper and spinach work well).

Method:
Put the water into a pan and add the curry powder, coriander and turmeric.
Using a medium heat, stir and wait to boil.
Add enough noodles to make the pot half noodles and half liquid.
Add the optional vegetables and let lightly boil for three to four minutes.

Turn off heat and serve these yummy soup, adding salt and hot crished red pepper to taste.
