Puff Pastry Filling Recipe
Me and my partner came up with this quick and simple puff pastry filling recipe late last week and I thought we should share it. It is a very hearty vegetarian pie filling with a spicy Mexican twist.
Makes filling for 1 large pie. Should take around 30minutes to prepare and make.
Ingredients:
1/2 large onion, chopped fine
3 cloves garlic, crushed
1 medium or hot chilli, sliced small
1 pack of veggie ground round (I used Yves)
1 can of Mexican refried beans
2 handfuls spinach
1 handful of mushrooms, sliced
1/2 red pepper, chopped into small squares
1 small can sweetcorn
Salt & Pepper too taste
Method:
Heat (medium heat) a little oil in a wok or deep pan.
Add the onions and garlic, fry until slightly browned.
Add the mushrooms, red pepper and chili and fry for a couple more minutes.
Pour the refried beans and veggie ground round into the mixture, stir and add the chopped chilli.
Add a little water if the mixture is too stiff.
Finally stir, add the spinach, salt and pepper to taste and fry on a low heat for a further 10 minutes.
This filling can be cooled, frozen or directly transferred to puff pastry, shortcrust or pot pie for immediate cooking.
